1 cup fat free reduced sodium vegetable broth
1/2 cup distilled white vinegar
1/4 cup fresh lemon juice
1 Tbsp packed brown sugar
1 1/2 tsp coarsely ground black pepper
1/2 tsp kosher salt
40 oz , young jack fruit in Brine (2 cans)
1 medium onion, halved & sliced
4 slices light bread
1/4 cup (see recipe in the WW app) sweet & spicy kc bbq sauce
In medium saucepan, add broth, vinegar, lemon juice, brown sugar, black pepper, and salt and bring to boil. Reduce heat to medium and add jackfruit. Cook, stirring frequently, until liquid is almost completely absorbed, 7 to 10 minutes. Add onion and cook until slightly softened, 2 to 3 minutes. Top bread with jackfruit. Drizzle BBQ sauce on top.
